Ingredients
⅔ cup creamy peanut butter or sunflower seed butter
½ cup semi-sweet chocolate chips
1 cup old fashioned rolled oats
½ cup flax seeds, ground
2 tablespoons honey
Directions
- Combine all ingredients in a medium-sized bowl and stir until combined.
- Cover the bowl and place in the refrigerator for 15–30 minutes. The dough will be stiff and easier to handle.
- Using the palm of your hands, roll the dough into little round balls. You should have 12 bites. Store the Energy Bites in a covered container in the refrigerator and eat within one week.
Tip:
- Add raisins or dried cranberries for a touch of sweetness.
