Ingredients
2/3 cup rolled oats
1 ¾ cups soy milk, divided
2 cups frozen blueberries
1 banana, peeled
Directions
- Place rolled oats and 1 cup soy milk in a glass bowl or jar, mix to combine ingredients, and cover. Place mixture in refrigerator and allow to sit overnight or at least six hours.
- Combine overnight oats, frozen blueberries, banana, and ¾ cup soy milk in a blender and blend until thick and creamy.
- Serve immediately.
Tips
- Substitute a different nondairy beverage for the soy milk.
- If using fresh blueberries, add 2 cups ice.
