Blueberry Oatmeal Smoothie

Serves: 4 

Fruits and Vegetables: ¾ cup per serving 

Ingredients 

2/3 cup rolled oats 

1 ¾ cups soy milk, divided 

2 cups frozen blueberries 

1 banana, peeled 

Directions 

  1. Place rolled oats and 1 cup soy milk in a glass bowl or jar, mix to combine ingredients, and cover. Place mixture in refrigerator and allow to sit overnight or at least six hours. 
  2. Combine overnight oats, frozen blueberries, banana, and ¾ cup soy milk in a blender and blend until thick and creamy. 
  3. Serve immediately. 

Tips 

  • Substitute a different nondairy beverage for the soy milk. 
  • If using fresh blueberries, add 2 cups ice.
