摩洛哥茄子醬

食材

1根大茄子,去皮並切碎

3顆大番茄,切碎

1瓣大蒜,切碎

1/3杯香菜或歐芹,切碎

1湯匙紅椒粉

1湯匙孜然粉

½茶匙鹽

¼杯橄欖油

¼杯水

作法

  1. 將蔬菜和香料洗淨並備妥。
  2. 將所有材料放入大且深的平底鍋或鍋中以充分混合。
  3. 闔上蓋子,用中火慢煮30分鐘,偶爾攪拌。若有必要,可調整火候避免燒焦。
  4. 以叉子或馬鈴薯壓泥器將番茄和茄子壓碎並混合。掀起鍋蓋繼續烹煮約10分鐘或直到內容物如同義大利麵醬一般濃稠。

可加入些許卡宴辣椒增添辛辣風味。
