Yellow Roasted Cauliflower


1 head fresh cauliflower, cut into florets (about 6 cups raw or frozen)

1 clove garlic, minced (about 1 tablespoon) (or 1 teaspoon garlic powder)

1/4 cup canola or vegetable oil

1 teaspoon ground turmeric

1/4 teaspoon black pepper

1 tablespoon soy sauce, low-sodium

1/4 cup Parmesan cheese for topping, about 1 teaspoon per serving (optional)

  1. Preheat oven to 450 F.
  2. Wash and chop fresh cauliflower. If using fresh garlic, peel and mince.
  3. In a large bowl, combine oil, turmeric, garlic, black pepper, and soy sauce.
  4. Add cauliflower florets to the bowl and mix well to coat.
  5. Spread cauliflower in a single layer on a baking sheet or casserole dish.
  6. Bake for about 30 minutes or until cauliflower begins to brown.
  7. Sprinkle with parmesan cheese just before serving, if desired.
