Calypso Peach Salsa


1 1/2 cups fresh peaches or nectarines, chopped (2 medium)

1 cup honeydew melon, chopped

1 medium jalepeño pepper, seeded, chopped

1 cup fresh pineapple, chopped

1/2 cup red bell pepper, seeded and chopped

2 tablespoons fresh cilantro, or 2 teaspoons dried cilantro

2 tablesoons fresh lime juice

2 teaspoons sugar

1/4 teasoon salt (optional)



1. Wash and prepare fresh fruits, vegetables, and herbs.

2. Place all ingredients in a medium bowl and mix.

  • Serve with baked tortilla chips or on top of poultry or fish.
  • Choose nectarines if you don't like the fuzz on the peaches. Or, peel the peaches.
