Peachy Rice Salad


2 cups brown rice, cooked

1 medium peach, sliced

1 green bell pepper, seeded and chopped

1 cup celery, diced

1/4 cup vinaigrette dressing



1. Wash and prepare fresh fruits and vegetables.

2. In a large bowl, combine all ingredients and mix.

3. Serve chilled.

  • Try using 10 minute rice to cut down on cooking time.
  • Add scallions or red onion for a savory taste. For a sweeter flavor, add a dash of cinnamon.
  • Make your own vinaigrette dressing with a 1 tablespoon of olive oil and 1 tablespoon of red vinegar.
